
I just learned from NPR’s article, Get the Most Nutrition From Your Veggies, that I could do a few simple things to empower my vegetables to do more for me. That’s a win!
Drizzle olive oil on tomatoes
A little oil helps our body absorb all of the nutrients.
A little heat brings out antioxidants
Green Beans, tomatoes, and other vegetables benefit from a little cooking.
Eat raw and cooked
Vitamin C in carrots is maintained when eaten raw, but beta-carotene is released when cooked for about five minutes.
Enjoy in Color
Eat a variety of vegetable colors the way you like them.
