
Everyone in the family loves this simple pancake recipe full of oats. Lexi couldn’t resist picking some raspberries to top off her pancakes. I enjoy my pancakes with whipped cream cheese and blueberries (from frozen if needed although fresh is best). Of course, you can’t beat a little mound of whipped cream atop a stack.
I doubled the recipe from the original because they disappear like magic. I stuck with the same amount of bananas as the single recipe. If you are making this recipe for one or two people and have the ability to resist pancakes, refer to the original Healthy Banana Oat Pancakes recipe without my slight alterations. I often add baby carrots or half a larger carrot before blending. In this recipe the carrot color doesn’t come through, but we’ve added more carrot and enjoyed a little orange color in the pancakes.
Banana Oat Blender Pancake Recipe
Add all of the ingredients to the blender container and blend thoroughly. The batter will be a little thinner than some pancake batters, but they cook perfectly in a nonstick pan or with a little butter or oil in the pan.
- 4 eggs
- 3-4 baby carrots (optional)
- 1 Tablespoon coconut oil (optional)
- dash of cinnamon
- 2 teaspoons baking powder
- 2 teaspoons vanilla
- 2 Cups oats quick or old fashioned
- 1 Cup milk (any variety dairy or nondairy)
- 2 ripe bananas cut into chunks
